Kadai Paneer

Kadai Paneer (Cheese & Vegetable spiced up and served in the wok it's cooked in)

Pointer 1: Home made cheese is a good substitute to store bought mozzarella.

Pointer 2: Firm tofu broiled or sautéd is another substitute to cheese if your are lactose intolerant.

Ingredients:

  • 1/2 pound cheese cut into cubes
  • 2 red onions diced
  • 2 large tomatoes, chopped
  • 1 large green pepper cut
  • 3 to 4 Tbps. regular canola oil
  • 1 Tbsps. red chillie powder
  • 1 Tbsp. coriander powder
  • 1/2 tsp. garam masala
  • 1 tsp. turmeric powder
  • 1 1/2" fresh diced ginger
  • 3 cloves garlic minced
  • 1 clove
  • 1 tsp. cumin seeds
  • Few sprigs fresh cilantro
  • Salt to taste

  • Method:

Heat oil in a kadai (indian wok as shown here). Add cumin, clove and garlic in hot oil. After a minute, add the onions, sauté until translucent. Add tomatoes, ginger and continute cooking for another 8 to 10 minutes.

Add turmeric, chillie powder and coriander powder. Toss a couple times and then add the green pepper. Cover and cook until peppers are slightly cooked. Add garam masala. Mix well. Finally add the sautéd paneer. Add coriander before serving.

Serve with hot indian bread or rice.
